The veg fried rice is an interesting but easy dish, which can be easily made at home in no time. This indo-chinese dish can be cooked very quickly with the ingredients of cooked rice, different veggies, and little spices.
Ingredients:
- 2 cups cooked rice (cooled)
- 2 tablespoons cooking oil
- 1 teaspoon finely chopped garlic
- 1 chopped small onion
- ½ cup chopped carrots
- ½ cup chopped beans
- ¼ cup green peas
- ½ cup chopped capsicum
- 1 tablespoon soy sauce
- ½ teaspoon black pepper
- Salt according to taste
- 2 tablespoons chopped spring onions
Stepwise Instructions:
- Heat cooking oil in a big pan or wok on high flame.
- Put chopped garlic in the pan and sauté it for few seconds.
- After this add chopped onions in the oil and sauté for about 1 minute.
- Now put chopped carrots, beans, green peas and capsicum in the pan and stir fry them for 2 to 3 minutes.
- Sprinkle some black pepper and salt to add flavor to the veggie mixture.
- Put the cooled rice into the veggie mixture in the pan and stir fry for few seconds.
- Now pour soy sauce into the pan and stir fry the rice for 2 to 3 minutes.
- Put off the flame and sprinkle chopped spring onions on the fried rice.
Cooking Tips:
The veg fried rice must be prepared using the cold or leftover cooked rice in order to avoid the problem of stickiness during stir frying.

You can serve this dish with dishes like vegetable manchurian, chili paneer, or just with a little gravy.
