Locho is one of the famous foods found in Surat City of Gujarat state. Locho is a word that means ‘a mistake’. Locho is considered a ‘mistake’ because it was accidentally invented when trying to prepare another snack named Khaman. Locho turned out to be a very interesting and tasty snack; thus, it is enjoyed widely in Gujarat State.
This tasty street food is soft with some grains. Locho is usually served warm with additions such as butter, green chutney, sev, and other spices. Locho can be enjoyed at any time of the day, but the most common time is during breakfast and evenings. It is a favorite food of people in Surti food markets. This street food is easy to enjoy due to its light and flavorful texture.
There have emerged many other varieties of Locho including butter Locho, cheese Locho, and masala Locho. However, the traditional Surti Locho remains more favored.
Ingredients:
1 cup besan (gram flour)
2 tablespoons sooji (semolina)
1 tsp ginger-green chili paste
1 tsp turmeric powder
1 tsp Eno
Salt to taste
2 cups water
For toppings:
Butter
Sev
Chopped onions
Green chutney
Lemon juice
Chaat masala
How to Cook Locho?
Firstly, mix gram flour, semolina, turmeric, ginger-green chili paste, salt, and water in a bowl to form the batter.
Rest the batter for ten minutes.
Thirdly, add fruit salt and mix the batter gently.
Fourthly, pour the batter on a greased steaming plate and allow the batter to steam for about fifteen to twenty minutes.
Fifthly, after steaming, break the mixture slightly by using a spoon to get the Locho texture.
Lastly, top the Locho with butter, sev, chutney, and lemon juice.
